I was wondering if my laptop would be powerful enough to run morrowind on high setting with texture plug-in.

2GB DDR3 (1gb remaining after windows is booted)

If you haven't already tried to run it with the texture replacers:
I do not see how it should pose any problems for that computer, perhaps if you have a weak GPU otherwise it should work just fine
