Multiple Characters for Different Guilds/Play-styles

I wanted to get others opinions on having multiple characters for different play-styles and guilds.

Heres my situation. In Oblivion I did 100% of all the quests on one character, a heavy-armour sword swinger, never had an issue or really wanted to play as a different character until months later when i rerolled a mage. However in Skyrim my character who is a sword and shield heavy armor I had intended to make him a completionist and do every guild/side quest/mq then make other charcters like i had in oblivion. Just finished the companions which I had fun with, moved on to riften and the thieves guild and am having a terrible time with the first mission to break into the honey making estate. Well of course this is because everyone and their mothers can hear my dude in light armour (while all my skill/perks is in heavy) "sneaking" around. Also, RP wise, my character wouldn't feel very good stealing from people who haven't wronged him.

I planned on focusing on one character and not repeating content for months but now it seems I must make a thief character with the proper perks to be successful. I'm not sure whether I can keep up with multiple characters this early in (who's done what, etc.)

What do you guys think about making multiple characters for different guild and all that this early on?
