I want to do a old west outlaw type of character to live in the prairies. What skills would an outlaw have ?

This sounds fun. I'd pick the following major skills:
Pistol shooting
Horseriding
Cattle rustling
Bean eating
Farting
Poker playing
Horse thieving

Marksman/Light Armor/Acrobatics/Sneak/Alchemy/Blade. The few "pistol" mods that I know of require knowledge of at least one school of magic. Dump either Alchemy or Sneak if the gun mod requires two schools. Blade is for when the expensive ammo runs out, or when you deplete your magicka. EDIT If I were to do this build with the only "gun" mod I stll have the class would be Marksman/Conjuration/Destruction/Light Armor/Blade/Sneak/Acrobatics.

The standard bandits in the game have the following majors: Block, Blunt, Acrobatics, Light Armor, Mercantile, Security, Sneak.

Bandit archers have the same majors except they drop Block in favor of Marksman.

An outlaw would probably be a lightly equiped versatile fighter. Because he's an outlaw he can't rely on services in town and should try to be self-reliant and does his own repairs.

1. Blade or Blunt
2. Block
3. Marksman
4. Light Armor
5. Armorer
6. Restoration
7. whatever you think would fit

What would a Western be without a barroom brawl? Given that Hand-to-Hand seems to be a necessity.

alchemy, so you can live off of the land, marksman because its the closest thing to a gun, blade for your trusty bowie knife. Ride around on a horse. For armor i would use leather. Bout as cowboyish as you can get in a mid-evil fantasy game

I still think you need horse thieving as a major skill. Live in a camp and set up a corral. Steal bay horses and bring them to your camp. Most stolen horses will wander home as soon as you dismount, but stolen bays will stay right where you dismount. Yeah, collect stolen bay horses.
