They've never said one way or another, but all indications are that they don't plan to do anything further with Skyrim since they have moved on to other projects. There's also a number of other threads regarding this same topic so you might try reading some of those over to get other people's thoughts.
Honestly, we don't know why. Therefore no one can give you an answer.
But they have never remastered/remade a game before, and they have said statements like "we always look forward to the future, to make new games."
Mods on PC have remastered the game already. That's one of the reasons they let us mod their games, so that the players can remake the game themselves for years to come.

As a fellow console player, I understand why you ask. Between Skyrim and Halo, I've got about 4000 hours on my Xbox - how much longer can that device last? Not too long so I'll have to decide whether to buy another console or switch to the PC in the not-too-distant future. Without a remastered version of the game, I'll be hard pressed to buy another console so I'll probably switch to the PC at that point. If you've got a new console, you can keep going for a long time but without the benefit of the ephemeral 'latest and greatest'! There are worse things in life...
