Climbing, levitation, spears, actual open cities, werewolves, attributes, classes, more npcs, better AI, A bigger game world, etc.
Just more stuff.
Oh how about faster load times, higher frame rates?
Not counting Climbing, All up until "More NPC's" Had been done on a Console, the original Xbox to be exact. Not sure what that game was called, I think "Morrowind", but don't quote me on that.
Climbing itself is kind of an odd term. I can climb in Fallout 3, it just results in jumping up ledges. There's no reason a console can't simulate climbing animation though.
More NPC's is kind of a toss up, Assassin's Creed, Red Dead Redemption and Grand Theft Auto IV have quite a few NPCS, that said, NPC's aren't exactly gameplay.
Better AI, I've yet to see any conclusive evidence that console AI and PC AI are particularly different from one another, not in any discernible way at least.
Bigger Game World is technically a Graphical issue. You can't "Play" a larger game world. Simply having a larger game world bleeds into better gameplay itself, not an actual form of gameplay.
Faster Load Times: Not Gameplay, Higher Frame Rates: Depends on hardware, and still, not gameplay.
