I just watched the new gameplay trailers again (those 3 in HD), and again noticed, how much the music contributes to the scene!
It feels so nice, so lovely ... in my opinion it really adds a lot to the atmosphere!
I always felt, the music is one of the strong parts in Bethesda games (only played Oblivion and Fallout3 though).
I often wasn't too impressed by the music of recent games. It's sadly not a matter of course to get music, which not only sounds nice on its own, but also largely contributes to the feeling/atmosphere of the game in a fitting way. In some games the music is even rather destroying the atmosphere by being terribly unfitting.
I'm most pleased by two pieces of the demo:
The nice theme, which starts, when the player enters Riverwood.
The "mysterious" music, which starts in the second video, when the player opens a gate, which leads through a streamlet into a really nice looking cave.
I'm less impressed by the music in fights. Not meaning it's bad or anything, but as always I think, it might be annoying sometimes. But that might just be a personal thing ... also it's probably very hard to do a fitting music, which is not "disturbing" somehow .. after all, it should give the player a feeling of danger (maybe I just don't like danger ^^).
It'd be cool though, if the game would maybe decide to not play that music, if you're stronger and the enemies, which attack you are rather weak in comparison then.
To me it always felt a bit awkward, when I got attacked by a rat, and the music sounded like I'd be part of an epic battle against creatures of doom.
