Can we expect to ever see Skyrim officially ported to the Mac and see it on the Apple App Store or on Steam's Mac games store?

I have the game on Xbox but my Xbox always freezes, my computer is a Mac not a PC. I went to find a Mac version of the game so I can finally play it fully but discovered that a Mac version didn't exist unless you go through less legitimate channels that I'd rather not use.

Will I ever see an official Skyrim for Mac?

Probably not.

Softworks has released RAGE for Mac (by id Software) and the Elder Scrolls Online apparently will be on Mac too, but no Game Studios game (TES games and Fallouts) has ever been on Mac. And seeing how Skyrim uses a "new" engine, it apparently wasn't on their agenda to make it Mac portable either.
