If you want any comparison to a speculative release date for Elder Scrolls V, Bioshock Infinite was announced very recently, and it's looking towards a 2012 release. For games that were not ready for any sort of E3 reveal, like Elder Scrolls V and Bioshock Infinite, I believe 2010/Early 2011 are out of consideration. 2012 seems like a really safe window to put them in.
Now, Bethesda should just release a small teaser of Elder Scrolls V at least sometime soon, hopefully before QuakeCon is done. Otherwise, I'll just be obsessing over Bioshock Infinite until Elder Scrolls V.
They could be waiting for hype surrounding Fallout: New Vegas to die down. It is being made by a different studio, but it's still a sequel to a BGS game. Sequel may be the wrong word, but next installation still carries nearly the same gravity. If Fallout is still close to the hearts of Bethesda fans, I don't think they want to overshadow that franchise with their biggest one that, quite frankly, would blow FO: NV out of the water. But, this is speculation on my part, and it may be that they really don't care about the work of other studios at all. Who knows, let's just wait and see.
