One-Handed To Two-Handed [Skyrim]

I was told by a friend that it would be a good thing to be an all-around player. Frankly, I have only done a sneaky-theif player or a dual-handed tank, in which I have started recently and am at level 31. Would it be a good idea to make a player know how to sneak and be good in light armor as well as do dual handed and do good in heavy armor?

My thoughts on this is no, as I have noticed it is pretty hard late game to do this, and if I equalized it throughout the game, it would just make the entire game much more difficult and not really worth the time. I have been dealing with the transition with heavy, two-handed into light, one-handed.

However, the question still comes up, is there such a thing as an all-around character that is worth the effort making?

This includes mages! So this player would have mastered, let's say, Destruction, Two-Handed, One-Handed, and Shield skill trees.
