There were so many great things in Morrowind that were abandoned or drastically changed in Oblivion. I can't possible narrow it down to just one thing. I would love to see Skyrim include a lot of things that made Morrowind such a great game.
Freedom-
Oblivion seemed like a step backwards in terms of freedom. Morrowind had more weapon types, more factions to join, and more spells which gave you more freedom to play the game how you wanted. I want to explore the world in all 3 dimensions with levitation/jump/slowfall spells. I know these were probably removed because of the "closed" cities inside their own interior cells. Hopefully they can make a game world that supports levitation and movement skills. Teleportation spells like mark/recall and the intervention spells were really cool, but I guess they aren't as useful with the fast travel system. I also want more freedom with the enchanting and spell making systems. Sadly it seems that the spell making system has been confirmed to be even more limited.
Style-
Morrowind had a unique style that drew me into the game. The unique, exotic, and sometimes almost alien look of the architecture, clothing, armor, weapons, etc. made it standout for me out of all the other fantasy games I have ever played. The alchemy ingredients and foods were all weird made up things instead of apples, carrots, and oranges. The animals like Guars, Netches, and Nix-Hounds were much more interesting than Sheep, Deer, and Wolves. Oblivion just seemed so generic and uncreative compared to Morrowind.
No compass-
The compass markers in Oblivion were a horrible idea and took away the mystery and fun of exploring. In Morrowind there were many hard to find caves that felt more rewarding to discover. With the compass system these kinds of hidden places are completely pointless. I often found myself completely ignoring the landscape around me because I was focused on the indicator on my compass of a nearby "point of interest".
Placed loot-
I really hope placed loot makes a comeback. The random leveled loot in Oblivion discouraged you to explore dungeons at low level. It also made all dungeons feel more generic because you knew that the same item could potentially be found anywhere, instead of like Morrowind where you knew that the items can only be found in certain specific areas.
A good story-
This is just a personal thing, but I thought the story of Morrowind was much more interesting and engaging than the story in Oblivion.
Now I'm getting depressed... I think I will go play some Morrowind.
