Because you get to talk to three people that were there, including a Dwemer who witnesses his people's disappearance. You also see piles of ash where the Dwemer simultaneously burned up in their homes.
Also, we see a divine thousand-foot-tall robot who breaks time itself and conquers a continent. And the heart of a dead god powering four other godly figures.
And yet you somehow have a hard time believing that somewhere along the line, some people used magic to inadvertently (or partially inadvertently) wipe themselves out? Since I assume that pointing out the complete lack of evidence is insufficient persuasion, think on that.
