I know i'm officially on the vamp side, cause when I enter DG I have to slaughter them all, but please tell me, there is a way to get ALOT of crossbow bolts, i'd really like to use it for more than the pathetic 60 bolts I have right now..... Is there a way to amass a lot of them?

I am pretty sure you should be able to smith them yourself with steel ingots and firewood, at least that is what the wiki says.

I've tried I don't get an option, I can't remember rightly, but I'm sure someone posted I had to progress through DG to unlike a special forge? Unless I'm imagining it?

That is probably right, but I cant say for sure, Sadly the wiki doesnt have a lot of info.

Craft them would be simplest or use the command console when it comes to PC

You cant craft crossbow bolts at any forge, you need to go to Gunmar's forge in fort dawngaurd thats the only place you can forge them.

Yeah, and I'm pretty sure you need to do the radiant quests for the girl to be able to craft them too.

I can craft bolts at any forge. You need to use Gunmar's forge to craft the special bolts. I did the Dawnguard side so maybe that unlocks the ability to craft bolts at any forge (given you have the steel/dwarven smithing perks).

Edit: I think kvlasco has it right, you need to do dawnguard side quests to be able to craft crossbows and bolts.

This. I now have yet another reason to loot these places - soul gems, dwemer metal, general loot AND crossbow bolts. Once im done with my current quest I'm so finding a dwemer ruin to relieve of it's treasures...
