Is it possible to reverse pick pocket an item...

into a shopkeepers inventory, then have them regularly stock that item?

I'm trying to figure out everything I can regarding buying more throwing knives. My game glitched and every vendor who sold them now has permanent, unchanging, non-replenishing stock.

nope, you need to go in and redo there file in GECK to modify there inventory, as for the glitch, they only respawn every 3 game days, if he still glitches

save in the store, quit the game then load with "continue",

if that fails, wait 3 days, try again (each day) but buy one item from him each day.(this will be a royal pain in hardcoe)

Merchant Inventory comes from a chest or container that is usually hidden off cell, not what they are carrying.

As for the Inventory, the Sunday Issue will stop Merchants from respawning if you never play for 3 game days per session. If you load the game, play for 2 1/2 Game days, then save and exit, when you start up, you still have to wait 3 days again. Also, I have noticed that not all merchants even get new inventory every 3 days, sometimes it takes 6 or 9 days. It seems to help if you buy stuff from their wares to get a new mix when it replensishes.

I think it's possible in one sense. When I was going the glitch with Chet I had all those Leather Armors and I put some of them in the cash register and then I looked at his inventory and I saw the leather armors were there.

This is why I love mods that change it to a daily restock. Frankly the 3 day thing is a royal pita when you want to sell all the crap you have built up, and then have to spend literaly an hour IRL playing the Save-quit game fire up game log into your latest save andcheck to see if the merchant has actualy spawned anything then buy one item because he still has not reloaded his shop inventory wait 24 hours save -quitegame fire up game log into your latest save and check to see if he has reloaded his inventory yet.

seriously I did this for almost an entire 2.5 hour game session to sell a couple of assualt rifles. then I went in and speeded up merchant respawn and never had a problem with that since.
