One of the first enchantments I do in the game is an amulet with CE Levitation for 1 point. With only 1 point, it's dreadfully slow, but it's always there if I need it. And I do another amulet with Water Breathing and (IIRC) 25 points of Night Eye, for deep diving. Later in the game, I like to do a pair of exquisite pants with a few points of Restore Fatigue, so I can finally run everywhere without concerning myself with it. And that's about it, really.

There is also a http://www.uesp.net/wiki/Morrowind:Enchant#Compounding_Effects which explains how to squeeze the most into your item.

Agree, this is a top CE.
I also like the restore fatigue but I would recommend putting both of them into belts instead of amulets. The reason is that you can equip the fatigue belt to land and start running. If you use amulets you risk inadvertently removing your levitation when using one of the good in-game amulets like amulet of shadows for example.

CE Restore Fatigue is easily one of the handiest.

I never thought that effect would be so important until I started Morrowind. I never had fatigue problem in Oblivion

Its a single player game man. Nothing needs to be nerfed or balanced its meant to be easy going fun. If I enjoy working my way up to level 60 and kill the king and getting his ring and enchanting royal guard armor, I don't see why it matters. If you find it unbalanced then don't use it or mod it. And its very hard to get its probably one of the a hardest items to acquire becasue his guards are very strong not to mention he is wearing the ring so he is a pain to kill. And Gravedigger, the head guard's sword is a pain to fight against because it makes you paralyzed and drains you health and can kill you in a couple hits if your not careful, but I also like that sword which is why I try to take him out first then use that sword to kill everyone else.

I kinda disagree, I get very involved in the TES games I play and I usually have a stash of super items somewhere that I collect them. But then I end up not using them because I like a challenge and hate being overpowered but then end up thinking "my character is a moron, he knows where he can find a ring with 100% resistance and reflect magic and he knows where to find a set of armor to go with the ring to have 100% sanctuary, but no, every single character I play is a moron and that′s why they would rather die from being swarmed by strong enemies than go and get equipment that requires 0 effort to get (assuming I have my stash ready) to be able to take on a challenge"

I once made a nord that was a bit sadistic in the way that he felt like he needed to be drenched in his own blood after a battle to be able to consider it honorable, but it′s a bit shallow to do that to every single character.

It would be much better to be a bit limited so that I don′t have to "strive to find ways NOT to be strong" but to "strive to find ways to be stronger".

A Summon effect is always fun, just if you want a personal (albeit pretty much useless) Ancestral Ghost/Skeleton/etc. following you around for an unlimited amount of time. If it dies, just unequip and reequip the item with the Summon effect and bam, another personal slave.

But they're too slow.

Right now I only use a CE Fortify Strength.

These are great ideas, and I'm going to have to try some of these out!

But, I'm on the fence here... I understand, from an RP standpoint, the need not to "twink" your character too much. If your character really didn't know what you knew, and came across an uber item.. he'd use it! But, because we are familiar with the game, and know where to find some items, or how to "work the system" as it were, we have to make a conscious effort NOT to do it every time. I do think it's a matter of preference though, and especially if you've played through the game a lot you may want that much more to NOT do these things. But there's always the "difficulty slider" for those who think the game is too easy as is (even without all the CE items). I for one do NOT find it too easy, but I am on my first play through and only level 20. Also, isn't there a mod out there that moves all of the "uber" items around so they are not in the same place? I can't recall what it is called, or if it does it randomly or not, but that would at least help. And then, when you do find an item like that again (in an unexpected place), there should be no shame in taking it and using it.

I used to have an amulet that had CE restore health 5 points on self. It didn't really change the balance of the game much. It was just nice to be able to run around and have my health restore by itself.

I try to limit myself to enchanting effects that make it easier to explore. I've got a par of pants with the combo water breathing and 30 Pts Night Eye (that was the very first item I enchanted). I've now paid to enchant an amulet of invisibility with 1 pt. Fortify Luck so that I can reduce the number of attacks by cliff racers, slaughterfish and dreugh while wandering. I'm on the fence about an amulet of levitation. In an earlier game, I enchanted several items with Chameleon, and those way overpowered. So far, I stick with items (and there's plenty of them in the game) I obtain from enemies.

Vanilla Morrowind is a bit too dark for me, at night and in dungeons, so I usually have an exquisite shirt with CE Nighteye 40 pt. called Catseye. At least, until my illusion is high enough that I can cast it as a spell that lasts 300 sec. or so.

I also almost always use exquisite pants with CE 3 pt. restore fatigue and 1pt. restore health. It provides for a more smoother, relaxed feel and Ive earned that after all these years. I call em Heavenly Slacks.

A daedric katana with an absorb health on strike I call Vampiric blade.
The robe of the Drake's pride, Marara's ring and the ring of phynaster. And the cuirass of the saviors hide, to offset my Altmer's weaknesses a bit.

I play as an Altmer apprentice, and have a huge mana pool. Coupled with restore magicka potions, I have no need for levitating amulets etc. at all.
I do like using long lasting spells. At high levels I walk around unarmed, blasting lightning bolts and summoning an axe when needed.
