Okay looking for some pros and cons. Might be gettin a job at small print shop (family owned) and FedEx print shop (corpo).

The family owned store will pay more but the boss looks high stress. FedEx would likely be the same corpo BS, pay less, but maybe more likely to give you timely raises.

Any advice?

Timely raises are not a guarantee. I started working for a restaurant corp after having worked in family owned businesses all my working life and, raises are few and far between. And it's not because I'm a bad employee, btw.
