Custom Bound Item

How would I create a spell effect that allows you to summon a Bound Daedric Warhammer, Battleaxe or Claymore?

Well, Pick your poison: You can script it, or you can use Oblivion Magic Extender. Scripting can be hard and complicated if you haven't done it before. Using OBME can be easier and it would create an actual magic effect which would be just like the other bound items.

There is a http://cs.elderscrolls.com/constwiki/index.php/Scripting_Tutorial:_Custom_Bound_Items on the CS wiki that should help with this. If you wanted to work with OBME, it includes example plugins showing off what it does.

Would OBME allow me to create a spell with multiple effects? For example:

Bound Helmet
Bound Gauntlets
Bound Greaves
Bound Cuirass
Bound Boots
Bound Claymore/Battleaxe

Essentially, a whole bound loadout.

No, you can only have an effect use 1 object at a time. However, you can have a single spell use all of the effects at once. That's how standard vanilla works, OBME doesn't change that.

So, just to clarify, it would not be possible to create a spell that summons a whole set of bound armor as well as as a weapon. I know you can create a spell for the armour in the game (360 version), but I planned to add a weapon as well as lower the magicka cost for my PC version.
