Well I have nothing new to add, so I'll just repeat what has already been said.

Sid Meier's Pirates (2004) is awesome. It has a rather cartoony style to it, almost as if it's a children's game, but the gameplay is great.

And Monkey Island of course, for a pirate themed adventure game series. The remake of the first two games are on Steam, and I was pleasantly surprised by Tales of Monkey Island. Just skip Monkey Island #4.

There was actually going to be a new http://en.wikipedia.org/wiki/Pirates_of_the_Caribbean:_Armada_of_the_Damned game in March, but it got canceled

It's the latest (last?) game in the series. Pretty much Sea Dogs 2.8, made by the Russian modding community after AoP turned out to... really svck
It may be a bit hard to find a physical copy. You can get it off Gamersgate, though.

Seems kinda discriminatory really. There's nothing about ninjas.

There is a rule about ninjas too, you just can't find it.
