Yes serfdom makes more sense, as long as it's done right and fits with the lore.

With the various Nordic holds and stuff It would be easy to implement (think Medieval nobles, they provided protection and land to serfs, and took their supplies and bound them in exchange, some could be more just [taking 'good care' of their serfs], and others could be bad, letting Goblins harrass their serfs)

Maybe there will be mentions of slavery, but I doubt it will be a main feature of the game.

Also, first post here!

No I think 200 years from Morrowind/Oblivion slavery would have stopped but thats just me, and I play a good character anyways so I would just end up killing them

actually having slaves in the game would be cool because I would go on a personal quest to kill all of the Slave traders and slave owners. Slaving is not cool. But it would give me something to do.

And this further proves my point.

I don't see any problem with slaves being in the next game. Of course, the PETA described by the OP (certainly not the real life one) would win me over since I'd probably puke at the thought of eating humanoid cats and lizards in the first place.

After what happened to Morrowind in 'The Infernal City' I think it would be quite possible that this led to refugees heading towards Skyrim, now refugees could easily be taken advantage of and this could have led to a resurgence of slavery.

Maybe not slavery in the strict institutional sense, but let there be some places where there's a distinct divide between the poor and the wealthy, where they might as well be slaves, and there might be a race of people( beast races, and Dunmer) who are most likely to be trapped in those low-paying, hard-working jobs with poor working conditions and no workers rights set in place. The civil war and the crumbling remains of an Empire will put an interesting spin on how the social structure is built, I'm sure.

As long as it wouldn't be race specific, but even then I don't really care, it's a TES and I'll love it either way! In addition, I don't even think it will be in the game.
