It's probably for marketing reasons. They're trying to sell Skyrim as a Conan the Barbarian style nordic open world RPG, showing lizard and cat people wouldn't really fit at the forefront of that setting.
Don't worry, we've got our first gameplay video, I'm sure that we'll see the other races sooner than later.
