Should Kahjiit go on all fours when Sneaking?

I wouldn't say so. They're bipedal. Even if they had legs like in Morrowind, the hind limbs are too long to facilitate efficient quadrupedal locomotion. They'd probly be able to crouch lower than regular humans, but would actually have a harder time on four legs, I would think.

It depends. If the Kahjiit have cat-like legs (this is, reverse knees) yes; if not, if they're shaped like Oblivion's, then absolutely not.

Cats don't have reverse knees. Cats walk on their toes :P Birds have reverse knees.
