Where on the Skyrim map was the dragon fight shot? I'm curious because the first thing I wanna do in Skyrim is go there and re-enact the trailer

That huge monster mountain shouldn't be hard to find. Then all you have to do is figure out where that village is (the one at the end where the dragon jumps off a building) and head to the peaks on the other side.
