Ships are not taxi cabs. You don't tell them where you want to go, you just follow their normal trade routes and get off whereever.

Those aren't galleons you take. And they're not taxi cabs either because they only go to one of their four, top, destinations.

You're missing the gigantic chasm between gameplay mechanics that can (and should!) be justified and those that cannot. Oblivion's fast travel is one of the latter.

It's an abstraction. I'll repeat again: FAST TRAVEL IS NOT TELEPORTATION

Ever seen a movie where a long travel is cut to just a few seconds? (I should rather ask, "ever seen a movie" because unless all the action takes place in the same location, it'll be there.) That's the same thing.
Not true. At the start of the game, all of the towns and the Imperial City can be Fast-Travelled to. Along with this, certain Main Quest locations like Cloud Ruler Temple and Weynon Priory can be Fast-Travelled to without prior knowledge of the location.
Oh boo-hoo, you can fast travel to places which have roads and signposts leading to them. As for CRT, it's definitely not on your map when you leave the sewers. If you refer to the time the marker appears on your map, it's when you're supposed to go there along with Jauffre and Martin, so you've got company and Jauffre at least knows the way.
