The problem with Bethesda is that no one even tries to compete with them. Rockstar has similar vision, but is pretty decidedly part of the "mainstream" market. Because of this lack of competition, they are happy to just be the best, rather than the best that they can be.
Franchises like Two Worlds don't have the experience or money to try and make a game on the level of quality of the Elderscrolls, but their ambition alone is impressive.
And whereas that game and Gothic are made for more traditional RPG fans, Elderscrolls continues to cater to a larger, more varied demographic. Which is never a bad thing on it's own, but when you sacrifice complexity and depth to achieve accessibility, you risk upsetting those fans looking for a more undefined experience.
