Are they talking about Skyrim or RAGE? Perhaps both?

Probably RAGE, possibly Hunted : The demons forge?

I'm guessing it may be showing off multiplayer games, rather than single player ones, with it being a LAN party.

I don't think they'll ever be a public demo for Skyrim. There wasn't one for Oblivion, or Fallout 3.
