If i get caught stealing or tresspassing by a friendly npc then they will attack but i dont know how to get them to stop or even if you can? Ive tried talking to them, taking out my weapon and putting it back and then talking to them but nothing works. In the manual it says to do this if you get in a fight by accident or if your getting your ass kicked by a friendly npc so i thought you could easily do it for much smaller crimes like the ones ive mentioned?

Minor crimes like pickpocketing, trespassing, some theft, and assault, are sometimes forgiven if you give the item back, go away, or put away your weapons. Some people are more forgiving than others however.

Major crimes like murder are unforgivable and will often result in whole towns/factions etc. becoming hostile.
