If I get (for instance) the Cowboy perk, is the damage shown for each revolver or lever action weapon include the extra 25%, or is it in addition to what is shown?

If you look at your weapon stat before and after taking the perk, it should be included on the stat. If not, then when equipped it should, just like ammunition types but this case is doubtful.
