I usually take 1 or 2. No matter what guns is a necessary skill for me but the other combat skill would either be explosives or energy weapons. A lot of the time though I will choose other skills like barter, speech or medicine. Makes things a little easier in the beginning.

By Level 30, I maxed two skills depending on the character, and maxed out Repair, Lockpick, Science, Medicine, Sneak, and got Speech to 90 (with the help of Naughty Nightwear, it can be 100). With Dead Money, I also maxed out Barter. For the extra five levels added by HH, I plan on maxing Explosives for my Melee/Unarmed and Guns/EW characters. For my Guns/Explosives character, I'll max Survival.

I try to max out as many combat skills as possible! Two to three at a min. With the right perks, choosing the right clothes to wear and using the right buffs you can get away with *really* low non-combat skills.

Like in Speech! With a 1 Charisma, using party time mentants, moonshine, whiskey, beer, naughty nightware and meeting people book(with Comprehension) you can pass a 100 skill check with a base score of 52!

Guns and energy weapons are the only ones I put points into unless I notice some perk that requires something to be a certain number.

I max one. I then put some points in a 2nd one that I consider a complementary or back up skill (does things that the main skill doesn't) but I don't try and max the 2nd weapon. I like being a weapon specialist, and I like to play that a character wouldn't have time to become a major expert in multiple weapon categories. Plus I use low-XP mods so I rarely get even remotely close to lvl30+, forcing me to be more choosy about skill points.

Depending on your definition I always max out two. Guns and Sneak. With the sneak attack bonuses in Fallout and Elder Scrolls I've always found Sneak to be the most powerful combat skill.

I usually only put points in EWeps or Guns, and carry 1 pistol and a rifle. Pistol for when they're in my face, rifle for everything else.

One.
I find it pointless to take two as there are too many perks I need for both to be max proficiency.
So I just go with one and become really good with that one.
Unless I go melee or unarmed, then I pick both.

Usually just one, unless it is melee/unarmed (I play on a console, so I can't use mods to fix the perk issue). Though I played an EW/explosives/repair character which was very fun.

This falls down once again into the whole roleplaying some fonv player do. I have one guy I nickname "the boxer" uses only unarmed and only brings up unarmed. While others like my "ncr gal" or my "slick operator" tend to have 2 types of combat one for there main and one for short ditance in your face combat. Lastly got my "lone stranger" who uses all types of weapons but lacks charima need. I also plan to make one whos good at everything but combat skills, letting teamates save his ass instead.
I mean theres always a catch to the amount of combat skills you use even out of roleplay. Having only one lets you put more points into other skills but limits being able to multi task action right e.g unarmed needs to get close to target meaning high chance of getting hit. While the more rounded you are in combat skills the less points you spend on other stats and makes it alot harder for your player to kill tougher enemys dew to lower damage than one skill uses, But lets you multi task well. eg snipe alot of enemys in the distance, use grenades at mid range, then get out a knife to fight in close combat. If I had a choice on the matter, I would go for 2 being wise as suffers less of drawback of the end of the amount of skills, but still can make it harder early game- start of mid game if certain items aren't found or if you don't focus one for a while. Its really hard to to think about it now, as I type into this thread and my veiw points have changed abit. Intresting.
