Not sure how accurate it is, but everything I've tried so far seems to do something... Only certain things seem to be customizable in the console, lots of things have no effect in the game. Thankfully, the FOV settings do work.

I'm not sure if it's necessary, but go to your Crysis 2 root folder, and you should see a file called "system.cfg". Open it, and add the line "con_restricted=0" at the bottom.
Now, start the game, load last save, hit the ~ key to open console, and try these settings:
cl_fov=
r_drawnearfov=
pl_movement.power_sprint_targetFov=
cl_fov is the overall field of view, I have mine set to 75 (default is 55 or 60, can't remember).
r_drawnearfov affects how close your gun is to the screen, I have it set to 65 (Default is 55).
pl_movement.power_sprint_targetFov not 100% sure what this one does, but it seems to affect your field of vision coming out of sprint.
Anyway, try messing with these in-game, see what works for you. Just keep in mind, if you set the distance between the gun and the screen too far, there are clipping problems with Alcatraz's arms during certain cutscenes.
