The eye represents the eye of intelligence, the human eye, the same eye that lifted man from the dark-ages (you may have heard of those) a time between the collapse of classical civilization and the Italian renaissance where religion ruled over the human spirit, almost keeping us from progressing, keeping the human soul in the dark so to speak, the illumination from the 'dark-ages' came when brave men in the name of science and discovery and for the human spirit challenged the established ecclesiastical rule of the day and using methods of science lifted man from the corrupt dead hand of religion.
