Anyone else disappointed/skeptical of Mammoth/Giant combat?

So after seeing the E3 video (which is for the most part amazing by the way), I couldn't help but be a little underwhelmed by the few seconds of combat with the mammoths/giants. It seems fighting them was just simply the same game mechanics as fighting everything else, from a fox to an undead, with little animated reaction from player or creature or interactivity besides button mashing. Seeing as these two things are much bigger than you (although I was hoping for a little bigger maybe) I feel they should be a bit more of a challenge and you should really have to worry about dodging those clubs, tusks, feet and charges as they would certainly crush even the strongest person, whether or not s/he is "Dragonborn" (at least I would think). We saw some nice stuff with the dragon picking up the guard, but these things will probably only happen between npc's? I want combat more realistic and unique to the creatures you are fighting, I mean fighting a wooly mammoth and having to dodge while it charges or swings it tusks or lifts its front legs might seem a bit classic "Crash Bandicoot" boss battle but it would be more fun, interesting, realistic and add more variety. As much as I wouldn't want to fight such beautiful creatures I'd like the feeling that if I did, it wouldn't be pretty, they should be really hard for that reason. I understand why people don't want the game to be impossibly hard, I agree with that, and I feel that just adding more health or damage to them doesn't make them more fun to fight, and seeing as fighting them is entirely optional making them hard shouldn't be a problem at all. I also really hope you can jump on a dragon's back if it flies nearby, to kill it that way. I know we saw very little, but pronounce me skeptical (I'm also skeptical of the giants falling animation).
