I do not know what I did, but I can no longer edit certain pieces of my character during creation....specifically, I cannot change the hair type. This is something new, as I have made many characters in the past and I was always able to edit each and every part of the face during creation. At one point, recently, I saw an icon in the top left portion of my interface that looked like a closed lock...so I assumed I had locked the edit ability by doing something. I restarted the game, the icon was gone, as it always has been in the past, however, I could still not change the hair on my character.
