In Oblivion I collected wine and books. Will most likely do the same in Skyrim.

Well in fallout I collected nuka-colas. Saved up around 250 of them in my megaton house.

I liked to collect cheese in oblivon. I would travel across the world capturing every piece of cheese there was and I would take it to my cave and live with my cheese.

I like artifacts (both actual artifacts of ancient people such as the Dwemer and Ayleids as well as unique items) and books.
