Bosmer. Hoping for them to be radically overhauled for my stealth character.

We saw a redguard in the demo, as well as a dunmer. So the options should be more redguard, and more dunmer.

Argonians and Khajiit - I really, REALLY hope that the beast races in Skyrim are more than just people in halloween costumes.
Breton, and the women in particular - in my opinion, the most attractive of the human races, and I want to see just how much Beth has done to improve faces.
Bosmer - they got the shaft in Oblivion.
