I it was confirmed that you can get quests from some of them.

Maybe we'll get a quest where we can buy some magical seeds and grow them into a giant beanstalk where the giant who gave you the quest can live happily ever after.

Sounds like a shrine quest to me...

I think theres a thread for this, and it makes sense that you can talk with them, in Dwemer history it talks about how them and the giants interacted. Id imagine quests and trading/ buying from them is possible since Giant camps are confirmed.
