so i am use to oblvion were you click the alchmey set and brew away

in this one how ever i cant seem to find that so what is needed to do alchmey

Been a while since I have roamed Vvardenfell but I think you place the alchemy stuff in your inventory (the equipment not the food)

Inventory as in your little avatar in the menu, place the stuff over your guy and a popup should appear I think

Yeah, just equip any piece of Alchemy equipment and the window appears.
