Hola! You can expect me to be around during weekends. Still trying to get a hang of the game. A quick question, where can I find junk and wood excluding the random encounters?

Merchants if other players sell some to them, otherwise its encounters.

Not sure what your definition of random encounter is, but what you do is go into world map and press the triangle to enter a map area so that way you can find them without getting into encounters with enemies. If that's what you are already doing then you'll have to get lucky finding them off of merchants. Merchants don't stock on resources, only if other players sell resources to them.
