Buffout could be steroids. Steroids make you buff, and its called BUFFout. It makes you stronger and more durable, and is among the most addictive. It is useful to melee and unarmed characters the most (the most physical of characters) and steroids are taken by very physical people such as pro. atheletes.
Psycho could be PCP. Because PCP makes you psychotic, and violent.
Mentats to me, seem like gum or mints that you eat. But they are addictive, so I think they are caffeinated. They probably aren't serious drugs, no one refers to them that way. There are no Mentat junkies in any Fallout games I've seen. They make you more Perceptive (being awake from caffeine could do this) and more Intelligent (maybe a result of Perception boost?).
Party Time Mentats are probably dosed with something like Ecstasy, so you can party hard.
Stimpaks are some type of new miracle medicine (like Mass Effect bio-gel).
I think many of the drugs aren't just renamed drugs, but new drugs that work in similar ways to real drugs. The reason I believe they are entirely new drugs is because they are created in recipes different from real life, and have a different visual look to the physical drug.
But the other guy was right about Med-X. It is morphine, renamed.
