When working on the main quest can I stop other quests and c

Right now I need to take this Monk and the Septims hidden Son to some area Quest name is : Wyren's Pyrioryor something can I keep doing this quest and hold off on... Tha battle for castle Kvatch. Or if I wait too long will the battle for castle kvatch fail or go away?

You can never fail a quest in Oblivion by saving it for later (except one, but it's just some side quest in Bruma, and they specifically tell you how much time you have for it).

So no, you won't fail it if you go off and do other things.

take your time. go see the sights. take in a lesson or two. you could play the entire rest of the game and they would still be waiting for you.

Awesome, When I played through Arena back in Feb/March of this year I know that if you allowed to much time to pass in you could fail quests. That was the same when I played Daggerfall in March. I dont remember being able to fail quests in Morrowind. This is good to know :D

Most times my characters just walk off into the forests and explore the world.
150 hours later I say, "oh, the main quest- guess I had better go back to it."

This is good to know. I am attempting to break the Kvatch seige as a level 1 Nord female with full FCOM configuration and I am getting annihilated by Dremora guards. I have already backed out of the towers as it is too much. I am thinking of going off and doing other stuff but I was concerned that I need to do this now. If it isn't essential then I will go and see what this ashen dude wants with me near Bruma and then join the fighters guild and do some quests until I am beefy enough for those Dremora enemies.

Your enemies level with you. So, yes, you will have a better chance of defeating them, they will have a better chance of destroying you as well.

not with FCOM. among others it adds Oscuro's Oblivion Overhaul and Martigen's Monster Mod which, i believe, fix leveling to an extent at least.

FCOM fixes that as Pupp said, I wouldn't have bought it on steam if a mod didn't fix it. I had the GOTY edition on PS3 previously but quit after 23 hours play when the extent of the levelling hit me, it really is one of the worst gaming decisions I have seen imo. Thank Jupiter for the modding community and for FCOM.

I dont understand, whats wrong with the leveling? Feels the same as Morrowind did to me

There are two major differences between Morrowind and Oblivion in this area: enemy scaling and item leveling.

Oblivion employs Morrowind's leveling system and adds to it scaling. Scaled enemies are not static, they get stronger as the player levels. Oblivion employs a mixture of static, leveled enemies and scaled leveled enemies.

In Oblivion few items are hand-placed as they were in Morrowind. Instead items are introduced into the game via leveled lists. This results in enemies acquiring better equipment as the player levels. If you've ever heard anybody speak of "bandits in Daedric armor" they are referring to item leveling.

Most enemies in Oblivion are not scaled, they are handled just as they were in Morrowind. Item leveling, however, is pandemic. It is everywhere and affects nearly every encounter in the game, even those with shopkeepers. When you put these two game mechanics together, it tends to annoy many players.
