I suggest a Redguard. The build is kind of weird, however. The two main attributes are Strength and Speed, get Blade, Block, Athletics, Acrobatics, Restoration, Light Armor, and Marksman. Get the Thief birthsign for the extra Luck and Agility, the Speed is a good bonus as well.
I did this with an Argonian, and it works VERY well. Get maxed Speed first, followed by Endurance, and then Strength. Use one-handed swords, and a shield, and get a bow. You may also want to get a two-handed sword, which works very well with the extra Speed.
The main strength of this build is how fast it is. You can easily avoid most attacks, especially when you get Journeyman acrobatics and dodge rolls. You can heal any damage you may get with Restoration spells, and can block incoming attacks if you use timing. It may take some getting used to, because it isn't the Warrior or Thief spec, but is easy to get into if you've done both. Eventually, when your Blade gets higher, the disarms and knockdowns make this spec very good at standing toe-to-toe against any enemy, due to attack speed.
