So I'm relatively new to PC gamine and brand new to using mods. Last night I downloaded some mods from this site: http://www.stevemv.com/other/enhancements/morrowind/index.html

I THINK I followed the instructions correctly (all the mods save one are in my Morrowind Data Files Folder), but when I start up the game and go into the data files, all that's there is the files for the vanilla game, the two expansions, and my save file. I'm completely lost as to what to do, so I would appreciate any help I can get.

c\program files\bethesda\morrowind\data should be where your mods go. you'll see the morrowind, tribunal, and bloodmoon files there. plus subfolders saying meshes, textures, icons, and etc. if you got them there, then they should work.

That's where the mods are, but other than the subfolders you mentioned, that's it.

Are you using Vista or Win7 ??

Did you unpack the mod archives?

The mod files themselves have either the .esp or .esm file extensions. If there are no files with these extensions in your Morrowind\Data Files\ directory, then no mods will show up in data files at launch.

That is also far from the best guide out there. I could provide u with more links, but Im typing from my android.
