Have any of the game's soundtracks been released yet or listenable somewhere?

No.

But when the game comes out...
1. find Skyrim file
2. open up the sounds file.
3. find music
4. copy music
5. transfer to iTunes/personal disk

voila! your own personal soundtrack.

No kidding.

I love the music for the Elder Scrolls. It is just as Epic as O'Donnell's creations for Halo. I would love to own Skyrim's soundtrack just like I do for Oblivion and the Halo series.

No.

But when the game comes out...

edit: For some reason I thought you were refering to past ES soundtracks as well, but I assume that skyrim's soundtrack will be available there as well....
