I actually liked the way Morrowind did it, slowly introducing you to the world, without too much urgency. It gave you tiem to get used to the mechanics before it became obvious what the big story was about.
In Oblivion there's an awful lot of fighting very early on, prior to the slower paced fetching of ritual ingredients. You're already a hero in Kvatch and later Saviour of Bruma, in some ways your story ends there, and the rest is you as a Kenobi figure, helping the main character achieve hsi destiny. I didn't hate it as much as a lot of people did, but once Martin was safe in Cloud Ruler Temple, I went off to explore the world properly, not returning until much later for the investigation with Baurus.
I suppose in Skyrim I'll follow the leads for a bit, as would be logical for an escaped prisoner, but as soon as it calms down, I'm off exploring.
