Everything!!! :) But to be specific, probably the improvement of archery. I would like to say radiant AI, but since I haven't played the game yet I can't be sure.

The gameworld itself, and the dungeons now that they're being hand-crafted.

The possibility that I might be able to do the following all from stealth in about 2 seconds:

Shout stop time.
Shoot an arrow at foe #1.
Shout dash.
Knife foe #2 from behind.
Arrow hits foe #1, killing him.
Start attacking foe #3 right as time speeds back up and foes #1 & 2 finally hit the floor.

That moment is the #1 I'm looking forward to. That and just chilling out in the world that is Skyrim like I find myself doing with Oblivion half the time. Just sitting "outside" and staring at the world's starry sky with its two moons.

An RPG that allows a choice of race and gender, lately we're lucky to just get gender in RPGs.

I am most excited about getting the game in my hands, smelling that "new video game smell" kinda like when you buy a new car and then stickin that puppy in and installing it.

I look most forward to getting that sense of freedom and wanderlust that only a TES game can give you.
