If you have a Telvanni character, I would definitely recommend Rise of House Telvanni. It allows you to do some things "characteristic" of high-level wizards, such as recovering lost artifacts, traveling the planes (or in the Elderscrolls universe, called the "Outer Realms"), influencing Vvardenfell policy, etc. While it, like all mods, is not flawless (couple balancing issues I would prefer changed), it is by far one of the best role-playing mods out there and really makes you feel like a powerful and influential character. It also introduces some challenges, some of which take you all across the Morrowind world (by that I mean Vvardenfell, Mournhold and Solthseim).
Uvirith's Legacy is the same way, although it's not quite as challenging. Really makes you feel like you're a wizard working on research projects and stuff.
Antares also made an alternate version of the Tribunal Main Quest which, though it changes the plotline, I would argue is still "lore-correct" in terms of which characters are involved, setting, and end results.
The LGNPC Pax Redoran mod, while not quite as involved/long as Rise of House Telvanni, does the same thing for a Redoran character. The Hlaalu still have the short end of the stick in terms of mods, but that is changing (a modder recently posted a "Hlaalu business" mod here that's pretty good).
Given the limitations of Morrowind's engine, it's very difficult to make a mod for high-level characters that does not simply involve brute force survival. That's the one criticism I have about the redone "final battle" in Darknut's Greater Dwemer Ruins Mode (althouth I LOVE the rest of that mod). Many of these mods, and others that posters in this threat have mentioned, however, do a pretty good job of it.
