The red X's on the map have to be the guardian/standing ston

If you look at the red X on the map south of Riverwood, it's along the road that Todd takes in the demo. He stops to use the guardian stones, facing west toward the big lake.

He then proceeds northeast down the road toward Riverwood.

The road and the X on the map matches up with this exactly.

The only way that X does NOT represent a guardian stone, is if they removed the initial guardian stones from that spot and dropped something else significant down in that exact same spot.

There are only 13 guardian stones, confirmed by Todd, and there are 24 "X" in the map.

Maybe he means 13 for each play type (magic, stealth, warrior). And that some of them are in groups and some are on their own.

With so many Xs and only 13 guardian stones, I'm thinking it might mark a category that includes guardian stones, aedric shrines, and/or the Skyrim equivalent of wayshrines.

No. There are only 13 places with the guardian stones. Besides, the route Todd did in the demo is more like this: http://i767.photobucket.com/albums/xx316/randomguyface/skyrimroute.png

EDIT: The guardian stone in the demo is closer to the river, the "X" is not.

I think they moved the road back a little bit from the original demo.

He is obviously walking on a main road all the way down to Riverwood. And I didn't see any other main roads connecting into Riverwood from the right side.

i thought there were 20 or so X's on the map, from what people have been saying, though...

...and as i recall, there are only THIRTEEN standing stones, and if there are some grouped together like the warrior/mage/thief stones, that means even less X's should be on the map if they were marking the stones...

...so im afraid your theory is blown right out of the water.
