Yes, for consoles only, since we already have them for PC. Did you know that there's a self-installing, self-launching version that doesn't require you to use DOS? It basically makes them into regular windows applications. The downloads are up on UESP.
Those just install DOSbox and configure it. Clever idea, but you don't always end up with an optimal configuration.
I'm pretty sure Bethesda said they lost the Source code for the older TES games so to revamp it they'd have to entirely recreate everything in the programming aspect of it.
They would probably have to rewrite huge portions of the code anyway. Not only is it very platform-specific, it's buggy, unfinished and possibly uses licensed code they couldn't release even if they had it. Console versions would require redesigns just to be playable.
Your best bet for any olde TES games being playable without DOSbox is definitely http://xlengine.com/. If/when Lucius finishes it Daggerfall will be a lot more interesting than just a re-release would be.
