Question about balancing the leveling process

I've been reading the past few threads regarding level scaling and let's pretend I wanted to make an Assassin type build + level up alchemy.

Wouldn't it be a smarter choice to level up 1 level doing combat related skills, then get 1 level doing alchemy or doing a profession related skill? Rinse/Repeat? That way things stay somewhat balanced and you don't have to turn down game difficulty to compensate? Or am I over-thinking this entire process.

Just curious about this.
