sneak is your best friend as theif! and when in sneak mode and you are hidden you will get to pickpocket until you level up you will get caught. Use daggers or bows and try to use sneak attacks theifs are not built for toe to toe combat. Join the dark brotherhood you will get gloves that let you do double the damage perfect for those sneak attacks!

Bow & Arrows while hidden is your preffered attack as thief imo..

Sneak perks makes it alot easier to get in that first melee hit in the back as thief..

I'm a lvl 25 rogue player ... spent an aweful lot of perks in sneak.. (all perks up to 70 atm) and then quite a bit in Arhcery and One Handed..

Playstyle is obviously to remain hidden for as long as possible, taking out most foes in one hit... (Daggers with 15x dmg does potentially take out a Giant in one hit if you can close in on him)
Arrows takes out mostly lesser mobs in 1-3 hits

Muffled Enchantment on boots is also a good way to stay silent and hidden..

Also note, alchemy is in the thieving tree for a reason. Use it.

Get the Sneak perks that make you less noticeable and noisy get a muffle enchanted gear (with both you should be silent or as close as makes no different).

Or and make sure your walking when sneaking up on someone until you get the Silence perk, IE use the walk key/button (shift default on PC), as faster movement = more noise. You can also remove all your armour for even less noise.
