I've found that my game will usually save just as you hop out of the cart. "Prisoner, Level 1". Just make sure to keep that save and you won't have to keep travelling down to Helgen each time you want to make a new character!
You can indeed save before you make your character. Right when you get out of the wagon and the guy is calling out the names of the prisoners. I made 2 saves there in case I forgot and save over one.
If you have a PC you could save right after the whole thing and type "showracemenu" and you can edit your character. The only downside is you will lose any skills you would have gotten during the intro but it could be worse. Until Beth makes an update or someone makes a mod this is the best solution to skip the intro.

You can make a save before you get asked "Who are you?", which saves a little time. But I agree I wish there was a final chance to change your character before you leave the caves.
Yes make a save when you stand in the line before they ask you for your name and just keep that save for eternity. I miss the option to name my saves though...
It would be nice if there was a final "U sure bro?" option where you can change everything before you exit the keep like OB had at the Sewer Grate, it would save a lot of time.

At least we don't have Oblivion's problem of the jail cell and sewer having awful lighting, I always did a /showracemenu as soon as I got outside as my character looked nothing like I expected it to.

^^This. I have (well, had) a save set right after you get out of the cart. So all I have to do is create my character, and sit through the remaining 10 minutes of the tutorial.
