I try to sneak away, then come back for them.

But some enemies are weak, and you can just go toe-to-toe with them, with either your dagger or your sword.

The fast wielding dagger may be better if you have an enchant on it.

I either try to restealth or I switch to my dual maces (assuming the enemies are not trivial).

Daggers also don't benefit from gear enchants (+XX% to 1h dmg).

So they are only good for sneak attacks.

Nope they only benefit from smithing upgrades.

My favor combo is dagger on 1 hand, sword on the other. I can hit hard with sword, hit fast and apply poison/enchantment with dagger, not to mention the awesome unique power attack.

It may be a bug, but a dagger can still one-shot just about anything in the game with the right perks. Also, as someone else mentioned, they are the fastest weapon in the game, so with a powerful enchantment, your dps would be very high
